I've been using NOD32 with good success. In regards to exclusions, here are a few links that I've found useful in the past:

We use Symantec Anti Virus Corporate Edition 10.1 and find performance good. Very granular control unlike the "home" versions refered to in the link gbn provided. SAV CE will detect Exchange and exclude the needed files/folders. Good white papers on other types of server on their site. Great management and alerting tools as well.

I use Cisco Security Agent on several servers ( And workstations for that matter, It has been great. You can lock down executables that are able to run, and write very granular policies to allow anything you would like
