I recently setup a client to use ActiveSync for Droid phones. We had to order a web based cert to make it work, setup the typical permissions to allow it work work at what not. I have another client trying to do the same thing. I was having a 401 issue where the query didnt even make it to the server, now i have resolved that and get a 500 response.

From testexchangeconnectivity.com-

Additional Details
Exchange ActiveSync returned an HTTP 500 response.

Here is the eventlog reference on server.

Unexpected Exchange mailbox Server error: Server: [SBS01.xyz.local] User: [user@mail.xyz.org] HTTP status code: [501]. Verify that the Exchange mailbox Server is working correctly. 

One thing i have noticed and im not sure how to change it, "user@mail.xyz.org" should hit the server as "user@xyz.org". Any tips or troubleshooting processes would be really helpful!

Also mail.xyz.com and xyz.com have their own IPs, this is true of both clients.
