In a client/server system,which OS should be used on the server side which is the best OS in the market that is most commonly used now days for the server?

It depends on what you're trying to accomplish.

If you're building an application on Microsoft's .NET or SQL Server, then the typical choice would be Windows Server 2008.

If you're building something using Open Source technologies (like MySQL, etc.) or a Web Application that runs on Apache (including anything running through a Java Application Server) then I would say Linux or FreeBSD are good choices.

I think any Linux distro will suffice, I recommend Red Hat Linux

Where in the world do you live? In that part, what kind of human resources can you call upon for expertise? What kind of projects do you have planned? What size of environment? Do you have a budget? Client/Server what? web? mail? file? DB????

For example: considering the types of techincal people in my area, the vendors in my area, the needs of my company, the size of my company, and the budget we have (for sw, hw, my time, consultant time, after support...etc) I decided to replace the existing mail system with Win2k8 + MS Exchange 2010 solution. I will need to pick up Exchange 2010, but the local resources are good.

At a different company for a mail system I chose Debian/Postix solution (it was that or RedHat, but personal skill set tip'ed the scale to Debian)

You will need to provide many more details about where you are, what you want to do etc...
