I have a friend who runs a small game server on their home computer. For whatever reason, they aren't able to enable port forwarding on their end, so it's only accessible through Hamachi (they share the login info freely with anyone who asks). They want me to help make their computer accessible to people without Hamachi. If I connect to their computer over Hamachi through my (Ubuntu) server, would I be able to route connections from my.domain:1234 to their.computer:4321?

You might be able to accomplish what you are eluding to with PortMapper from AnalogX - http://www.analogx.com/contents/download/Network/pmapper/Freeware.htm.
