I've been handled down this project, which is running PHP 5.3.6 with PDO support disabled.

I have a cPanel login to interface with the server. What would be the process to install/enable PDO MysQL support?

[EDIT] Looking at a phpinfo dump, I see:

Configure Command   './configure' '--disable-fileinfo' '--disable-pdo'

Changing --disable-pdo to --enable-pdo would do it? How/where do I change those settings?

This is not a setting you can change through your web interface. The phpinfo() function is reporting the options PHP was compiled with. You are going to need to re-install or recompile PHP with the options you require. But first you should probably take time to figure out how your current version was compiled or installed so you can properly remove it, and build a new version.
