My client wants to have mail on his own server Which entries do I have to update? Only the MX one?     3600    MX  10

or:     3600    MX  10

Do I need to update POP, SMTP and IMAP entries too?

Yes, you will need to edit the MX record to point to the other server:     3600    MX  10

Additionally, assuming the clients will be fetching mail from that same server, the CNAME entries for pop3, smtp, and imap will need to be changed to point to as well.
