I was wondering how the number of disks used for RAID configuration affects performance? I know that it takes longer to rebuild data, but are there any other performance areas affected??

What RAID level? With lower levels, like RAID0 and RAID1, there should be no noticeable performance hit; in fact, there should be a performance gain, in some circumstances.
