Just out of curiosity as to if anyone has setup this type of environment where you have one big machine that powers and runs all of your companies desktops.

One idea was to buy http://www.e-itx.com/giada-slim-series.html(cheap) and mount behind the monitors and then just remote desktop into the desktops. The other advantage to this is that we could configure the desktops to be accessible from laptops so wherever the employee goes they have access to their desktop. It also allows the desktops to be more versatile.

It sounds like you're talking about VDI (desktop virtualization)? -- People have lots of experience with it, but you need to do quite a bit of research on it to see if it will meet your company's specific needs (that Wikipedia article covers some pros/cons & if you follow the links you may even find some implementation ideas).
