I'm trying to install Ubuntu Server on older hardware. When I boot with any ISO or SYSLINUX cd or usb drive (with plop) it gets stuck at the copyright information. However if I boot with any windows based disk (Server 2003, killdisk) it boots just fine. Does anyone have any idea what the issue is?

It is the right Architecture. I can't exactly get a screen shot but it boots and all I see is this i.imgur.com/3HReX.png with a flash prompt under it. – Brandon Carter Dec 21 '12 at 23:18
You're going to have to describe in more detail the hardware, the version of Linux (kernel) etc. if you're going to get any help. – EightBitTony Dec 21 '12 at 23:38

I've had this issue when the controller chipset or the drives themselves (optical or disk) don't have a compatible Linux driver available. That'd be my first check - hit up Google and make sure the hardware (those components in particular) has compatible Linux drivers.
