I am trying to build an environment that I store and run all my virtual machines in and possibly log in via ssh. It will be more like a test environment for relatives and I who want to learn Linux. I have Googled the subject and found some tutorials for Fedora, but non for Ubuntu Server. So would anyone be able to point me in the direction of any tutorials out there?

I'd recommend libvirt with the kvm / qemu hypervisor. With it, you can administer via SSH like you requested. You will also have the option to use virt-manager if you have GUI access.
