I created a new symlink to the right Ruby and it's working, but I'd like to know why cron was caching this sort of thing (if you have an answer).

I realized that /usr/bin/ruby was a symlink to the old Ruby version so I removed it. Now I'm getting errors: /bin/bash: ruby: command not found

BizLand's response was for me to sign up for a "custom DNS" add-on ($3/month but still, who does that?), but I don't know if this will allow me access to the zonefile. If I sign up for the custom DNS for one month, do you think I would be able to get the records I need in order to change name servers and keep using the same BizLand email?

A year later and I'm still thinking about this question. I would be happy to outsource the email hosting to something like Google Apps, but now that Google Apps does not have a free version, I'm looking for an affordable solution (preferably free) to keep my costs down. I'm willing to do the work of running my own mail server as long as I know I'm following industry best-practices. Also, I'm interested in having the flexibility of being able to manage email addresses through some sort of web app (or API) that I build myself.
