I would recommend looking around on the server a bit to figure out whether talking to the public IP really ends up talking to your server or a frontend proxy (load balancer or so) that actually picks up the certificate. My guess is they don't want you to have access to the private key - it's private, after all, right?

Nevertheless with FPM the nginx processes don't even run that code or am I missing something? The interesting bit is that nginx never should run application code in its process space.

The "MAC from software" is related to virtual machines. A NIC "owns" its MAC address. If you have a virtual machine, then there's a virtual NIC owning a MAC which (by definition) is defined by software.
