You can use mysqldump to make the backups and then restore them with the mysql command. I would actually recommend setting up a dev environment for each developer on their local computer and then have a shared test/QA environment. That way they can mess up their own data without affecting everyone else. :-)

I did this for a little while while we transferred data off our old VMware cluster (3.5) to the new cluster (4.1). As long as they are different VMs it works perfectly.

I was going to say that it was a problem with a snapshot. You can't make changes to a VMs disks when snapshots exist. I've run across this a couple times when other sysadmins have created a snapshot but not cleaned up after themselves.

Eval mode does allow write access. @BParker You'll need to purchase the Standard version of vSphere for write access (vmware.com/products/vsphere/buy/editions_comparison.html). I'm guessing they have some key that allows them write access to the servers without it being licensed.

I think ESXi is a better solution when you're going to dedicate a server to it. Because it runs on the bare metal you don't have to worry about the extra overhead the OS causes when the VM requests resources and it's just one less thing to have to manage. I've used virtual box on my desktop a couple times but I have had a better experience using VMware's products (VMware workstation and WMware Server).
