If the clients are connecting to mx.example.local, and the certificate doesn't contain that name, your changing the server configuration won't fix it. It says on the last command output you've pasted, FQDN : mx.example.local

MX records have nothing to do with sending mail; MX are only for incoming emails. You just need to choose what mailserver software you want to use, and then configure both that software and whatever applications/scripts/thingies that use it.

There are CAs who do that. In most cases, they use out-of-band proof of domain ownership, meaning they have actual people involved, which increases their overhead so those certs aren't as cheap. Verisign is an example.
