did you have tried to assign different fsid to your exports? E.g. fsid=0 and fsid=1. Probably client see that it's the same server and the same filesystems and squashes the mounts.

multiple version is not a problem as client uses one which is compatible. But may be your client wants to use NFS v2? As Enzo Wang suggested, check the traffic.

I would check network latensy first. Second what you can do is to check with packet trace time difference between TCP ACK reply ( time when server received TCP request) and RPC reply. This difference will indicate how long server was processing the request. After that you know where the problem is: server or network.
