duo able yo query ldap server from problematic nodes? Try to clean idmap cache by running 'nfsidmap -c'. Start rpc.idmapd in in a debug mode (rpc.idmapd -f -v) and watch the requests.

if you have exported /media/data/ on the server how you can expect that changes in /data/ will be visible on the client? /data/ is not a subdirectory of /media

your nfs traffic reaches the nfs server. Check the export file. You server sees client packes coming from e different IP address and rejects the mount request.
