We use VMware Server instead of ESX because we need full control over the host system (i.e. firewall, backup scripts, other maintenance stuff) and my understanding is that you wouldn't be able to do all this with ESX (at least not as easily as you could do with a standard Linux host system). We successfully used VMware Server on a Windows host for years (even on a much slower system) and never had any problems, even under IO load, so I suspect there is a real bug/configuration issue somewhere.

@Troggy: no, just CPU, motherboard and RAM (preferably 8x2GB, expandable to 16x2GB, for example); we already have all the software licenses we need.

Why not? An Intel Xeon® E5504 Quadcore CPU, a Tyan server board and 16 GB RAM (with 2GB RAM modules, as they are more affordable), upgradable to 32 GB, should certainly be able to handle 8-10 VMs for very few users. And such a configuration is available for <$1000.

And, how can I very if a task has been executed? Is it logged somewhere in the Event Log? I cannot seem to find any log entries. Thanks.

I actually meant if the machine is rebooted, is the task triggered again directly after reboot, or is only again started at 12pm, as specified in the GUI? I need the task to run every minute, regardless of a machine reboot etc.
