Thanks, the term "ephemeral" seems to be what people call the extra drive on a ec2 instance, it was not a reference to the data. The data in /var/www can be pulled at any time. I don't care about the logs after a certain amount of time, but I do care about them initially. I already have log rotation configured. Thanks I had not considered moving the rotated logs on a cron... that hold promise and reduces complexity, which I like.
