@JohnThePro I thought SQL Server Mirroring was one-way. Are you saying that if I had a mirror set up, and the brought down the principal server, upon coming back up it would pick up all the changes that happened on the mirror?

@Zoredache Having now used three different Exchange hosters for a significant period of time (over a year), and having all three perform regular scheduled maintenance, I felt safe with the assumption that setting up an Exchange installation with no outages is not practical. I wanted to find out why. @Zippy seems to have the answer.

This sounds like the most plausible answer so far, but it is contradicted directly by @Massimo's answer. I am a bit at a loss as to how to decide which one to award the answer. Suggestions?

@Jason I am sorry, but your answer is a contradition. First you say that regular downtime is not required and then you say that it is, and noone can avoid it. You cite Google as a counterexample to Exchange, however I have never received a downtime notice for GMail or Google Apps. You also, incorrectly, assume that I have used bottom tier Exchange providers. In fact I have not, and I have been paying far more than $3/mailbox/month.
