Might help to say what confuses you. The manual seems to suggest it works with specific PCI video cards. Without knowing knowing what's confusing you we can't help you.

I majored in computer forensics, I vaguely know what I'm talking about, and a vague, cargo cultish belief in guttman's paper is a pet peeve. Its a great paper, but its written for hardware of a very different era.

I've no evidence of data recovery using a electron tunneling microscope ever working. Most forensics uses pretty standard tools, with lots of precautions. Outside of a write blocker this sort of forensics is entirely software based.

Actually, the 'guttmann' method has different patterns for different encoding, and was designed for an era when magnetic domains are larger. With modern drives as little as a single pass would probably be enough, and a few passes with random data ought to be safe.

Pretty much zeroed your disk by doing that. That seriously makes it a lot harder to recover. There's a good reason the OP suggested you tried using testdisk, and recovering first, and while dd's syntax can be a little odd, that's a good reason to double and triple check before you run the command. You only wiped one server, right?
