No updates, sorry. I've moved away from NFS for my application, because SSH + SCP was an option. The issue was crippling :)

I tried to find a workaround for the losetup root user requirement. Doesn't look like there's something out there for that. Looks like the /etc/fstab mention isn't needed, though.
