I have now run a server for about 10 days with another adapter. I changed from one of the Intel ones (which Vagrant had set up for us by default) to the PCnet-FAST III for the NAT adapter. I have not suffered the problem since. @NathanC if you want to provide your comment as an answer I would be happy to accept.

Thank you for your comment. Sounds like a good hunch, I will try another adapter type to see if I see any changed behavior.
