I was reading the Arch Linux GRUB2 document where they recommend that the line where root is specified be set root=(lvm_group_name-lvm_logical_boot_partition_name). I see that in your config you have set root='(raid6-usr)'. As you noted in your question, it seems to think that /usr is your root. Try changing that, see if it helps. Anyway, shouldn't root be set to wherever /boot files are? Unless your /boot files are on (VG raid6, LV root) that is.

It's better to ship tapes, or blueray disks, rather than drives. If you go with drives, make sure the originals are kept safe and available just in case. I'd go for the drives myself (unless I had Ultrium 4 drives) because 10 TB = 410 single layer blueray disks!

It's not part of the default installation steps; one has to request it and then go through choosing a passphrase, etc. Like Trevor says, it might be possible that the device is not necessary for booting nor that your data is necessarily on that device. Although the 'etc' in the name name sounds bad. Perhaps you can create a new logical volume?

@fooledbyprimes: If you really, really want to "verify" the behavior of iptables do something like 1. from a machine with no rules loaded, ping another 2. in another terminal, issue an iptables command to the OUTPUT chain to drop all packets to the pingee. Effect will be instant.
