The databases live in /var/lib/couchdb/<couch version>/. If you copy the ones from /var/lib/couchdb/0.10.0/ to .../1.0.1/, they will be upgraded automatically. This is not done by the package automatically because you can't really "undo" it.

If you haven't had it installed before, yes. If you already had installed couchdb 0.10, it should just upgrade (but it won't upgrade the databases).
