Don't forget to transfer the FMSO, PDC, RID Master, etc roles on the win2k3 server (transfer the FSMO roles, DON'T seize) ⁃ ntdsutil ⁃ roles ⁃ connections ⁃ connect to server servername ⁃ transfer PDC, RID master, schema master, FSMO, etc. (all 5 roles)

Please see sysadmin's comment that suggests otherwise. In the GPP option, see: "Run in logged-on user's security context (user policy option)" changes the default user context. Normally preferences are processed using the Local System account (SYSTEM), selecting this option will make sure the user context is used instead. Network Drive and Printer Mappings ignore this setting as they always use the user context anyway.

VMWare ESXi is not administered via a Web browser either. You have to use the VI Client for Windows. Do you want a more robust VM solution or do you really want a bare metal hypervisor VM solution?
