chkconfig --list memcached will show you if it worked. If you don't have an /etc/init.d/memcached file, this won't get the job done.

Also, your instances do not jump around between hosts. They stay on the same physical machine for the lifetime of the instance.

EC2 is entirely suitable for enterprise applications. I work for a large ecommerce business with close to 200 instances and we are able to manage just fine. You have to work within the boundaries of the environment, though. I doubt Netflix would move to EC2 if it weren't suitable.
