I haven't had any previous experience with other applications, all the companies I've worked for previously use Quest due to the advantages and great interface on the tool (this is exactly the same as Active Directory (plus there is a web version of this rather than locally installing the tool)). I'm sure there are other applications available however I'd strong recommend the ActiveRoles server from Quest.

Firstly, are you able to connect to this Windows Server via another Windows based machine (or connect to another server from this machine)? I know you have tried this but what was the outcome... In addition to this, did you add the domain (or server name if you're using a local account) before the logon name? Example being: DOMAIN\USERNAME (ensure it's a backslash rather than forward (in the question you state you've used a forward slash))? Lastly have you tried a different account (possibly a local account) to see if you receive the same issue?

Have you tried deploying this via GPO using the "Set roaming profile path for all users logging onto this computer" policy? GPO would be the suitable solution here unless you manually added the profile path within AD or use a third party software to automatically create accounts and populate these fields within AD.

Are you deploying the background via policy at all (at the moment) or did you just have this set only within the default image you guys use?
