Unfortunately this doesn't work: nginx serves the same vhost content on both hosts.

Good point, but remember to also forward resolve the host name. Anyone who 'owns' an IP address can set a PTR record to a .googlebot.com domain.

Thank you both for your advise and my apologies for the poorly stated question. I know ESXi but thought it would be overkill for my situation. I'll give it a try nevertheless.
